Yesterday after a long, exhaustive day looking at houses (why is house buying the worst activity ever?) I needed a little pick me up. Ok, a serious pick me up. So very quietly after the kids went to bed I made myself a small(ish) batch of cookie dough. Not cookies. Cookie dough. And I’m not ashamed to say that it was just what I needed. However today, still in the midst of a housing crisis dilemma and feeling seriously low (although nonstop activities with the kids today might have also factored in to that) I decided to make these no bake energy bites. And unlike the cookie dough admission which obviously has to be said in a whisper these energy bites can actually be shared with others! No need to make post bedtime.

This is all I had left when the thought to take a picture occurred to me….(oops, hehe)…delicious!
This closely resembles a no bake cookie recipe I’ve been making since 1st grade (thank you Mrs. McCloud) but this recipe doesn’t have any sugar and no butter! Better yet I threw in some flax seed so I can officially call it good for me.
I didn’t actually add the toasted coconut because 1) we didn’t have any and 2) I wanted anyone other than myself to eat them. I also only added a few tsp of flaxseed because it’s new to us and I don’t want all of our tummies to go into immediate distress with all the healthiness.
Fantastic idea. I am completely addicted to making cookie dough as a comfort food and my rear is showing it! These will be much better, and also good to share with the kids for a treat. I might also try a dash of chia seeds, my new favorite add-on to foods.

Oh, and yes, the energy bites are my newest addiction. I’m going to go with the theory that they are good for me. At the very least they give me the pick me up that I need in the mid-afternoon lull!

I think I am officially making these too often (for myself). The good news is that my children have taken up the habit of basically eating their lunch AND at least part of mine, so I am technically just filling in the food gaps with energy bites!
